Banana Cake with Peanut Butter Frosting
 
Moist sweet banana cake with rich peanut butter frosting.

Recipe type: Dessert
Ingredients
  • Cake:
  • 1 cup mashed banana (approx 2 bananas). Use very ripe ones.
  • ½ cup non-dairy sour cream (I used Follow Your Heart)
  • ⅔ cup cane sugar
  • 3 tablespoons aquafaba*
  • 1 teaspoon vanilla extract
  • 1 teaspoon apple cider vinegar
  • 1 cup all purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt (omit if aquafaba is salted)
  • Frosting:
  • ¼ cup all natural creamy peanut butter
  • ½ cup powdered sugar
  • 3 tablespoons non-dairy milk
Instructions
  1. Preheat oven to 375F. Lightly spray an 8x8 baking dish with oil.
  2. In a large bowl, add the banana, sour cream, sugar, aquafaba, vanilla, vinegar and mix well.
  3. Add the flour, baking powder, baking soda and salt and stir until batter is completely combined.
  4. Bake for 30 minutes or until cake is brown and toothpick inserted in center comes out clean.
  5. While cake is baking, make the frosting by whisking the ingredients together until smooth.
  6. Let cake cool in pan for 10 minutes, then pour frosting over it and spread evenly.
  7. Let cool completely, slice and serve.
Notes
* aquafaba is the liquid from a of beans, like chickpeas or white beans. It is an excellent egg replacer! For more information www.aquafaba.com

  1. This looks so good! I love banana bread so this banana cake recipe has me very intrigued. I’m also a huge peanut butter fan. I trust your assessment that the combination of these flavors is awesome!

    1. Oh my goodness, if you’ve never had peanut butter and banana together, you have to try it. Often I just slice some banana and spread pb over them – yum!

      1. LoL! It is super moist because of the bananas and then ridiculously decadent with the peanut butter. Wouldn’t it be great to be able to taste things through a computer screen – maybe someday!

    1. Oh bummer. I think this would work perfectly with almond butter. I haven’t tried it this way but substituting almond butter 1:1 is would work great. I love bananas spread with almond butter so I’m sure the flavor would be awesome too! Let me know if you try it, I’d love to hear :-D.
