I feel like I should apologize for this Rocky Road recipe. A sorry but …. not really sorry…

I am kinda sorta sorry for introducing these addictive bars. I’m sorry if you eat the whole pan in one sitting. I’m sorry if there are fist fights in your kitchen over who gets the last slice. Really, I am.

However, I’m not REALLY sorry because they’re so freaking good! And they’re vegan. And every non-vegan whom I gave these too loved loved loved them. There were even parents hoarding them away from their kids. So much for teaching sharing!

You’re going to love making these too. They are so unbelievably simple to throw together. That’s part of the problem.  A kid can do it. It’s actually a really awesome recipe for kids to make – no oven, no cooking. Just a bit of microwave use, measuring, and some stirring.

I named them Super Rocky Road because they are jam packed with ALL the goodies. Cocoa Crispy cereal, Peanuts, Pretzels, and Marshmallows, mixed together with melted chocolate and peanut butter. It’s hits all the marks. Sweet. Crunchy. Nutty. Chocolate. i.e. Heaven!

If you make them with gluten free pretzels, they are a sweet gluten free treat.


These are awesome to make for bake sales, school events, and potlucks as they’re so simple to throw together and it makes a lot. Plus, kids and adults love ’em alike. It’s a winner!

Six ingredients to rocky road heaven. Sweet, crunchy, crispy, nutty, chocolate peanut butter marshmallow bars.

Instructions
  1. Line a 9x13 or 11x7 pan with wax or parchment paper. Or with foil. This makes it easy to remove from pan. You can also grease it lightly if you don't have the other options.
  2. In a large bowl, combine the chocolate chips and peanut butter. Microwave in 30 second increments, stirring well after each time, until chocolate chips are melted and mixture is smooth. It took 1 1/2 minutes on my microwave.
  3. Stir in all the other ingredients.
  4. Spread in the prepared pan. Press top down with parchment or wax paper so everything holds together.
  5. Chill a minimum of one hour in the refrigerator. (or room temp, but it will take much longer)
  6. Slice & serve.

If you don't have a microwave you can do the melting of chocolate chips and peanut butter over a double boiler.

  2. This looks so good and so simple, however, I am not a big fan of marshmallows. I think I can just leave them out, and maybe add a little more of the other ingredients. What do you think?

      I think it will be ok without marshmallows, however, I won’t promise they will as I’ve never tried it. I’d suggest substituting peanuts or pretzels or a combo of the 2 in place of the marshmallows. I think final product will be denser but still delicious! I’d love to hear if you give it a try. Thanks!
