This show-stopping chocolate bark is rich with flavor contrasts, sweet, salty, nutty, and creamy all at the same time. Your taste buds won’t be bored, that’s for sure.

The melted dark chocolate is swirled with Simply Sesame Pistachio Spread, sprinkled with chopped pistachios, bits of freeze dried strawberries and a dash or two of sea salt. It’s an amazing combo, the sweetness of the fruit with the richness of the nuts and sesame pistachio spread. Plus, it looks like you’ve spent hours working on a masterpiece, when in reality it just takes a few minutes to assemble, then a few hours to set (but let everyone think it took ridiculous effort…soak up the adoration and praise…you’re worth it!).

I’d never heard of these sesame based spreads from Bonelli Foods until I saw the contest but I was instantly intrigued. I love all things sesame, but usually it is used in savory applications, like hummus. This is a total game changer. The spreads are sweetened with cane sugar and come in three flavors: Vanilla with Almond Bits, Pistachio with a hint of Cardamom, and Original Pure Roasted Sesame. The pistachio was by far my favorite and is the one I used in making the chocolate bark. I think any of the Spreads would work in this recipe though!

Besides using these spreads in recipes, I’ve been putting them on toast as an alternative to peanut butter and dipping fruit in it. The Vanilla with Almond Bits is delicious on bananas! All the Simply Sesame spreads are made without preservatives, are gluten-free, peanut free, palm oil free, non-gmo and vegan. Pretty awesome!

Instructions
  1. Get all your ingredients together so it is all ready to go once you melt the chocolate.
  2. Prepare a baking sheet by lining it with parchment paper (you can also use foil or a silpat).
  3. Combine the Simply Sesame Pistachio Morsel spread with the coconut oil and melt in the microwave in 15 second increments until the oil is completely melted. Mix together thoroughly.
  4. Melt the chocolate in the microwave in 15-30 second increments, stirring after each time, until it is smooth and melted. Do not microwave for longer periods as chocolate can burn if not attended to. This can also be done over a bain marie.
  5. Pour the melted chocolate onto your prepared baking sheet and spread gently with a spatula until it is even across the pan. You can decide how thick or thin you want the bark to be.
  6. Drip ribbons of the Simply Sesame Pistachio Spread across the chocolate. I used a teaspoon and let it drop off the spoon.
  7. Using a toothpick, chopstick or skewer of some sort, swirl the Sesame Spread around in the chocolate. I find making small figure eights with a skewer makes a really nice swirly pattern.
  8. Sprinkle the pistachios on top. Then the freeze dried strawberries. Then sprinkle the salt over as evenly as possible.
  9. Set aside to harden, about 3-4 hours (can also be put in the fridge to speed up the process).
  10. When it's completely hardened again, break into pieces and enjoy!
