My fellow hummus lovers! May 13th is International Hummus Day…time to celebrate one of my favorite foods. I’m starting off the celebrations a wee bit early, well actually in my world, every day is hummus day so really it’s just one long continuous celebration. These Black Bean Hummus Taquitos, featuring Sabra Hummus, are a super easy appetizer to get the party started and are a real crowd pleaser. How are you going to celebrate this perfect food holiday?

Do you know why I love hummus so much, besides it being so delicious? And so versatile with so many different flavors? I love it because it’s an excellent source of plant protein. Everyone’s always worried about where this vegan gets her protein, but let me tell you how easy it is: Open container of hummus. Eat with Spoon. LOL! Ok, ok, usually I dip crackers or veggies in it but you know, it really is that good. And I never worry about how much protein I’m getting because with hummus around, it’s super easy.

Sabra sent me 5 different flavors to recipe experiment with and jeez, it was hard to decide which one to use. In the end, I tried all of them in this recipe and found a definite favorite. And ate a LOT of taquitos! They were all quite good but the Roasted Red Pepper gave a depth of flavor that I really liked. The Supremely Spicy one was good too but a little toooo spicy for me. Maybe someone else with tougher taste buds will appreciate it more in these taquitos.

Instructions
Black Bean Hummus Taquitos
  1. Preheat oven to 425F. Line a baking sheet with parchment or foil and coat lightly with vegetable oil.
  2. In a medium bowl, lightly mash the black beans so some are mashed and some are still whole.
  3. Add the corn, hummus, garlic, jalapenos and salsa and mix until completely combined.
  4. Lay out one tortilla and scoop 1 1/2 tablespoons of mixture about 1" from the edge (it doesn't look like much filling, but believe me, if you do more it'll explode out the ends when you bake them. Ask me how I know that, lol!).
  5. Carefully roll up the tortilla around the filling, starting at the edge closest to the filling. Very Important: Tuck that edge underneath the filling and then continue rolling until you have a tight cigar shape. Place taquito on the baking sheet, seam side down and repeat the process with the remaining tortillas and filling.
  6. After all the taquitos are rolled up, lightly brush the tops of each one with vegetable oil.
  7. Bake for 12 minutes and then turn them over and let them bake another 3 minutes. Remove from oven and let sit 5-10 minutes before serving.
Spicy Dipping Sauce
  1. In a blender or food processor, combine all the sauce ingredients and puree until smooth.
  2. You can decide how spicy/non-spicy you like this by adjusting the taco seasoning. Some seasonings are spicier than others, some taste buds are tougher than others, so make sure you taste it as you go to get it the way you like it.
  3. Serve taquitos on a large tray with the dipping sauce.
Recipe Notes

** Make sure you use unsweetened plain soymilk. Any flavoring or sugars will severely effect the taste of the sauce!

    1. I’m way out in the country too with no mexican restaurant…it’s so sad. Which is why I had to make these! And they’re so simple to do. I’d love to hear what your kids think :-D.
